In film, she is recognized for her performances in Pearl Harbor, Slackers, White Chicks, Sin City, Cheaper by the Dozen 2, Sin City: A Dame to Kill For, Ocean’s 8, and Lights Out.

King was born on April 23, 1979, in the suburbs of Omaha, Nebraska, to Nancy King, a former beauty queen, and Robert King. She was named after the character Jaime Sommers from the 1970s television series The Bionic Woman. She grew up with three siblings. King attended Westside High School in Omaha before dropping out in 1995 to pursue a modeling career in New York City. She also attended modeling classes at Nancy Bounds' Studios and later enrolled in a home-study program through the University of Nebraska–Lincoln.

Discovered in November 1993 at age 14 at a modeling school fashion show, King moved to New York City after joining Company Management. To avoid confusion with another model on the agency's roster, she used her childhood nickname, James, during her early modeling and film career. Her breakthrough campaign was an advertisement for Abercrombie & Fitch in 1994. By age 15, she was featured in publications including Vogue, Mademoiselle, Allure, and Seventeen, later appearing in Glamour and Harper's Bazaar. She walked the runway for designers such as Chanel, Alexander McQueen, and Christian Dior, and co-hosted MTV's House of Style in 1998. Her later modeling work included campaigns for Revlon in 2004 and Rocawear in 2006.

In 1999, King transitioned into acting, making her feature film debut in Happy Campers. She subsequently appeared in Blow before landing her first role in a major studio production as Betty Bayer in Pearl Harbor (2001). This was followed by her first starring movie role in Bulletproof Monk (2003) and a role in the comedy White Chicks (2004). King achieved further prominence in 2005 playing dual roles as the twins Goldie and Wendy in the graphic novel film adaptation Sin City, a role she reprised in the 2014 sequel Sin City: A Dame to Kill For. Her other 2000s film credits include Pretty Persuasion, Cheaper by the Dozen 2, Two for the Money, The Tripper, They Wait, The Spirit, My Bloody Valentine 3D, and Fanboys.

King expanded her television career with voice work and starring roles. From 2009 to 2012, she voiced multiple characters, including Aurra Sing, in the animated series Star Wars: The Clone Wars. From 2011 to 2015, she starred as main character Lemon Breeland in the CW series Hart of Dixie. During this period, she also took on the lead role in the biographical drama film The Pardon (2013).

From 2019 to 2021, King starred as Rose in the Netflix zombie drama series Black Summer. In the 2020s, she continued taking on prominent roles in action and thriller feature films, including Out of Death (2021) alongside Bruce Willis, Code Name Banshee (2022) with Antonio Banderas and Tommy Flanagan, the Lifetime movie Hoax: The Kidnapping of Sherri Papini (2023), and the ensemble action film Lights Out (2024).
