He is best known for his career in the Ultimate Fighting Championship (UFC), where he became a six-time champion across two weight divisions. Holding the UFC Heavyweight Championship three times and the UFC Light Heavyweight Championship twice, along with an interim light heavyweight title, Couture was the first fighter in UFC history to capture belts in two different weight classes. Inducted as the fourth member of the UFC Hall of Fame, he later served as a commentator and analyst for the Professional Fighters League.

Born in Everett, Washington, to Sharan and Edward Couture, he won a state wrestling title at Lynnwood High School. He served in the U.S. Army from 1982 to 1988, attaining the rank of Sergeant in the 101st Airborne Division. A clerical error routed his military wrestling application to Greco-Roman tryouts; despite having no experience in the style, he made the squad and won the U.S. Army Europe title. Upon his discharge, Couture competed for Oklahoma State University, earning a bachelor's degree in literature, achieving NCAA Division I All-American honors three times, and serving as a multi-time Olympic wrestling alternate.

Couture entered professional mixed martial arts in May 1997 at UFC 13, winning a four-man heavyweight tournament. Later that year, he defeated Vitor Belfort and captured the UFC Heavyweight Championship from Maurice Smith. Following appearances in Japanese promotions including Vale Tudo Japan and Fighting Network RINGS, he returned to the UFC in 2000, securing his second heavyweight title against Kevin Randleman. He defended the belt twice in bouts against Pedro Rizzo before dropping matches to Josh Barnett and Ricco Rodriguez.

Moving down to the light heavyweight division, Couture defeated Chuck Liddell for the interim title and Tito Ortiz for the undisputed championship. After trading title victories with Belfort, he lost his championship to Liddell in 2005. Following a second loss to Liddell at UFC 57 in February 2006, Couture announced his initial retirement from mixed martial arts and was inducted into the UFC Hall of Fame later that year.

In March 2007, Couture returned to the octagon at age 43, defeating Tim Sylvia to win his third UFC Heavyweight Championship. He defended the title against Gabriel Gonzaga at UFC 74 before severing ties with the promotion in October 2007. His departure triggered a public dispute with UFC management regarding contractual obligations, fighter compensation, and unmade fights.

Outside of his fighting career, Couture worked as a wrestling and conditioning coach at Oregon State University and helped establish training camps and gyms, including Team Quest and Xtreme Couture. He expanded into entertainment and broadcasting, serving as an event analyst, appearing on the television series Pros vs. Joes, and taking on acting roles in films such as Big Stan.
