Among his prominent roles are Ryder Callahan on the daytime drama The Young and the Restless, Wade Kinsella on the comedy-drama Hart of Dixie, Deputy District Attorney Mark Callan on the legal drama All Rise, and Benjamin "Dex" Poindexter, also known as Bullseye, in the Marvel Cinematic Universe project Daredevil and its revival Daredevil: Born Again. In addition to his screen acting, he created and starred in the web series Stupid Hype.

Bethel was born in Hillsborough, New Hampshire, and identifies as Jewish. He launched his screen acting career with a television debut as Brad in an episode of the teen drama series The O.C. titled "The Telenovela." Following his initial appearance, he performed in guest roles on several established television programs, including JAG, Cold Case, and NCIS.

In 2008, Bethel portrayed Corporal Evan "Q-Tip" Stafford in the Emmy-nominated miniseries Generation Kill, which starred Alexander Skarsgård. The same year, he made his feature film debut playing Corporal Green, an Army Special Ops soldier, in the Vietnam War drama 1968 Tunnel Rats. Shortly after, in 2009, he joined the recurring cast of the long-running CBS daytime soap opera The Young and the Restless, playing Ryder Callahan through 2011.

Bethel achieved wider visibility beginning in 2011 on The CW's comedy-drama Hart of Dixie, playing Wade Kinsella, the neighbor to central character Zoe Hart. Production on the series commenced in early 2011, leading to its premiere on September 26, 2011; the program ran for four seasons and concluded on May 7, 2015. During this period, BuddyTV listed him at number 14 on its TV's Sexiest Men of 2011 ranking, and at number two on the 2012 list. He also developed and starred in the digital series Stupid Hype for CWD (CW Digital Studio) and appeared in four episodes of ABC's legal thriller How to Get Away with Murder as Charles Mahoney.

In 2017, Bethel performed on stage in the Roundabout Theatre Company's production of The Last Match, a play centered around professional tennis. He returned to major television roles in 2018 by joining the third season of Daredevil as Benjamin "Dex" Poindexter / Bullseye, later returning to the role in Daredevil: Born Again.

Beginning in 2019, Bethel starred as Deputy District Attorney Mark Callan on the CBS legal drama All Rise, appearing as a regular cast member through the show's conclusion in 2023.
