Born in Los Angeles to Korean parents, Park moved with her family to Canada when she was 22 months old. She grew up in the Kerrisdale neighborhood of Vancouver, graduating from Magee Secondary School in 1992. She later earned a degree in psychology from the University of British Columbia.

Park began her acting career at age 25 when she was cast as high school student Shannon Ng on Edgemont. In 2003, she appeared in the Battlestar Galactica miniseries and continued playing her character across subsequent series, films, and the 2009 television movie Battlestar Galactica: The Plan. Her early career also includes a role in the 2007 crime drama film West 32nd and portraying Lt. Sandra Telfair in the video game Command & Conquer 3: Tiberium Wars alongside her Battlestar Galactica co-star Tricia Helfer.

In 2008, Park took on co-starring roles in the A&E series The Cleaner, which aired until its cancellation in September 2009, and the CBC series The Border, which was cancelled in 2010. She made an uncredited cameo in a 2009 episode of CSI: Crime Scene Investigation titled "A Space Oddity," portraying a fan at a science fiction convention. In 2010, she appeared as Eva Kahn in the Fox series Human Target.

From 2010 to 2017, Park starred as Officer Kono Kalakaua in the CBS revival of Hawaii Five-0. She and co-star Daniel Dae Kim departed the series in 2017 following a salary dispute. Reports indicated that CBS offered them 10 to 15 percent less than their white co-stars, Alex O'Loughlin and Scott Caan. While CBS stated they offered significant pay raises, critics pointed out that the network maintained a pay disparity between the leads.

In 2018, Park joined the cast of the ABC drama A Million Little Things as Katherine Kim, a lawyer, working mother, and wife of a former musician. She initially passed on the role twice before show creator DJ Nash convinced her to join by showing her the program's cold open. That same year, she starred in the science fiction thriller Freaks as a government agent apprehending individuals with supernatural abilities. Park married real estate developer Phil Kim in 2004; they live in Vancouver and have one son, born in 2013.
