Born on 24 January 1957 in Bradford, West Riding of Yorkshire, Edmondson spent parts of his childhood living in Cyprus, Bahrain, and Uganda due to his father's employment as a teacher for the British Armed Forces. Between 1968 and 1975, he attended Pocklington School in Yorkshire. He later enrolled at the University of Manchester to study drama, earning a Bachelor of Arts degree in 1978. During his university years, he formed a close personal and professional friendship with fellow student Rik Mayall and met comedian Ben Elton.

Edmondson and Mayall began performing together as the comedy duo 20th Century Coyote, becoming featured acts at The Comedy Store and The Comic Strip. This led to television work, including the launch of The Comic Strip Presents... in 1982 and the BBC sitcom The Young Ones, which ran from 1982 to 1984. During the 1980s, Edmondson starred in the film The Supergrass, the comedy series Happy Families, and Filthy Rich & Catflap. He also portrayed Sir Adrian Dangerous alongside Mayall in the Dangerous Brothers double act and performed in the spoof heavy metal group Bad News.

In 1991, Edmondson and Mayall co-created, wrote, and starred in the sitcom Bottom, playing flatmates in a project known for slapstick and crude humor. The show ran until 1995 and led to five UK stage tours. The duo later collaborated on the 1999 feature film Guest House Paradiso, which Edmondson co-wrote and directed. Edmondson also took on theatrical roles during the decade, appearing in West End productions of The Rocky Horror Show and Samuel Beckett's Waiting for Godot.

Throughout the 2000s and 2010s, Edmondson expanded into dramatic acting, reality programming, and literary projects. He secured recurring roles in series such as Jonathan Creek, Holby City, and EastEnders, while portraying Count Ilya Rostov in a 2016 television adaptation of War and Peace. He also appeared as Captain Peavey in the 2017 feature film Star Wars: The Last Jedi. His stage work continued with the Royal Shakespeare Company, where he played Malvolio in Twelfth Night and later Ebenezer Scrooge in a 2022 adaptation of A Christmas Carol.

In addition to acting, Edmondson has maintained an active musical and presenting career. He directed music videos in the late 1980s, including Squeeze's "Hourglass," which won Best Video at the MTV awards. He performed with the Bonzo Dog Doo Dah Band and formed the folk punk ensemble the Bad Shepherds in 2008. Edmondson has hosted factual television series, including The Dales and Ade in Britain, and won Celebrity MasterChef in 2013. He has also authored books, including the 1995 comic novel The Gobbler and the 2017 children's story Tilly and the Time Machine.
