Born in Buenos Aires in 1967, Subiotto has Croatian and Italian ancestry. Before pursuing a professional career in acting, he spent his earlier years playing volleyball.

Subiotto's stage history includes roles in theatrical productions such as Mujeres soñaron caballos, Espía a una mujer que se mata, Los hijos se han dormido, and En lo alto para siempre. Alongside his work as a performer, he co-managed the Puerta Roja theater venue in collaboration with Adrián Canale.

His screen profile expanded significantly following his performance as Ernesto in the 2015 drama film Incident Light, a role that earned him the Sur Award for Best New Actor. He subsequently appeared in the feature film Animal. In 2019, he maintained a busy film schedule, featuring in several motion pictures including El bosque de los perros, Delfín, Hojas verdes de otoño, La afinadora de árboles, La deuda, and Ciegos.

Subiotto's film work has received significant critical honors at international festivals. In 2023, he earned the Best Actor Award at the 27th Lima Film Festival for his role in The Barbarians. That same year, his performance in the film Puan secured him the Silver Shell for Best Leading Performance at the 71st San Sebastián International Film Festival. On television, he appeared in the series División Palermo.

In 2025, Subiotto was cast in the television series The Eternaut (El eternauta) and co-starred in the dark comedy feature Dogs (Perros). He also appeared in Iván Fund's film The Message (El mensaje), which was selected for the competition section at the 75th Berlin International Film Festival for its February 2025 world premiere. His projects also extend to the 2026 feature film Glaxo.
