Born in Paris, France, to parents Catherine and Alain, Weiss grew up alongside her brother, Auriel. Her heritage includes Polish roots on her mother's side and an Alsatian paternal grandfather, Jean-Michel Weiss, who worked as an engineer, contributed to chromotherapy developments, and served in the French Resistance. She spent her youth moving between France, England, and Poland, becoming fluent in French, English, Polish, Italian, German, and Hebrew. Her artistic training began with classical ballet at age three, followed by acting classes at age seven after attending London theatre shows with her great-uncle. Following her baccalaureate, she trained at the Cours Florent and the London Academy of Music and Dramatic Art.

Weiss made her feature film acting debut in 2013, portraying Mary Fleming in Thomas Imbach's historical drama Mary Queen of Scots. That same year, she appeared in the Italian film drama White as Milk, Red as Blood. Her profile expanded significantly when she joined the recurring cast of the History channel drama Vikings during its second and third seasons.

Over the following years, Weiss took on diverse roles across various film genres. Her cinematic projects include the action feature The Legend of Hercules, the French comedy Serial Teachers 2, the action film Overdrive, the French comedy Accidental Family, and the short film Alien: Containment. In television, she made a guest appearance as Ippolita Sforza in the historical series Medici: Masters of Florence.

Weiss later took leading roles in genre films, starring in the French sci-fi horror project Meander and the British horror feature Shepherd, receiving several genre awards for her work in Meander. On television, she played Marianne in the Netflix series La Révolution, voiced the character Fulke in the 2020 video game Assassin's Creed Valhalla, and portrayed Madame du Barry in the 2022 historical series Marie Antoinette.
