She achieved further international recognition for her collaborations with filmmaker Paul Haggis on the television series Crash and the film Third Person, as well as for starring on the FX drama series Tyrant.

Atias was born in Haifa, Israel, to parents of Moroccan Jewish descent, and her grandfather was a rabbi. Her younger sister, Shani Atias, also became an actress. At age 15, Moran appeared on the Israeli youth television program Out of Focus. She planned to serve in the Israel Defense Forces, but a diagnosis of meningitis at age 17 frustrated her plans, prompting her to move to Germany and then Italy to pursue a modeling career.

In Italy, Atias was discovered and became a model for Roberto Cavalli. Her modeling work included campaigns for Cavalli, D&G, and BBG jewellers, alongside hosting an Italian television talk show. After establishing herself in fashion, she was encouraged to pursue acting. She subsequently performed in English-, Italian-, Hebrew-, and Spanish-language films, earning a nomination for Best Actress at the Festival Sguardo al Femminile for her performance in Menahem Golan's 2005 Israeli film Days of Love.

Her early acting work led to prominent roles in Italian cinema. She played a provocative drug addict in the feature film Gas, appeared in Luca Lucini's romantic comedy Oggi sposi, and starred in Dario Argento's supernatural horror film Mother of Tears. Mother of Tears premiered at both the Toronto International Film Festival and the Rome Film Festival in 2007.

In 2008, Atias entered American television when she was cast as Inez in the drama series Crash, eventually becoming the female lead opposite Dennis Hopper. Working with Paul Haggis led to her appearance in his film The Next Three Days. In 2011, she starred as Ana in Cynthia Mort's project Radical, and in 2012, she played Mika in the Israeli series Allenby Street, which she also produced. She was later cast in the FX series Tyrant, created by Gideon Raff.

Following her work on The Next Three Days, Atias pitched, co-produced, and co-developed the film Third Person with Paul Haggis. To prepare for her role as Monika, she lived in Italy for four months without basic utilities like running water or electricity and studied at the Italian Actor's Studio with Michael Margota to perfect her accents. The film premiered at the 2013 Toronto International Film Festival.

Throughout her career, Atias has engaged in various humanitarian efforts. She served as a spokeswoman for Milan in campaigns against graffiti and animal cruelty, volunteered in Haiti following the 2010 earthquake with Artists for Peace and Justice, served as a goodwill ambassador for IsraAid, and volunteered in a Tel Aviv COVID-19 ward in 2020. She became a naturalized United States citizen in February 2017 and gave birth to a daughter as a single mother in 2022.
