Arzón was born on September 20, 1981, in Philadelphia to a Cuban refugee mother who became a doctor and a Puerto Rican father who worked as an attorney and law professor. Raised with an emphasis on education and family, she was not involved in athletics during her childhood. She attended New York University, graduating magna cum laude, before pursuing legal studies at Villanova University School of Law.

Encouraged by her father, Arzón began her professional career in law after graduating from law school in 2007. She worked for seven years as a corporate litigator at the firm Paul, Hastings, Janofsky & Walker, LLP. Her interest in athletics was initially sparked during her undergraduate studies in the summer of 2002, when she was held hostage alongside 40 people at a Manhattan wine bar. Following this traumatic experience, she began running for the first time in her life.

Arzón entered her very first athletic event in 2003 by participating in a 10K race, after which she regularly ran between her law school classes. Over her athletic career, she has completed more than 50 races, including 25 marathons, three 50-mile ultramarathons, and a 100-mile race. She ran her first marathon at the New York City Marathon in 2010 and completed the 100-mile Keys100 race in Florida in under 30 hours in 2016. In honor of her mother, she also ran five marathons in five days for MS Run the US, an endeavor featured in the documentary Run It Out.

In 2012, Arzón left her law firm to build a career in health and fitness. She began as a freelance sports reporter for outlets such as Newsweek and New York Magazine, covering the 2012 London Olympics. She co-founded the fitness movement Undo Ordinary and Undo magazine in 2013. Seeking to show an alternative way to be an athlete, she reached out to Peloton's CEO and joined the company as an instructor in New York City in 2014. She was promoted to Vice President of Fitness Programming in 2016.

In addition to her role at Peloton, Arzón is a Road Runners Club of America-certified running coach and a global Adidas ambassador, starring in the brand's 2016 "Here to Create" campaign. In 2015, she joined 19 other elite survivalists and athletes to trek the Serengeti for the National Geographic Channel series MYGRATIONS, which aired in 2016.

Arzón was diagnosed with Type 1 Diabetes in 2014 and serves on the Leadership Council for the nonprofit Beyond Type One. She married investment manager Drew Butler in Tulum, Mexico, in 2019, after meeting him in Manhattan in 2016. They have two children, a daughter named Athena Amelia born in March 2021 and a son named Atlas born in July 2023. Arzón is a vegan.
